The Hadith that you quoted, is not talking about the expression that appears in the Quran امة وسطي Middle Ummah.
These Hadithes, is about Muslims being the best Ummah.
I agree this has a Quranic evidence, but, "being the Best Ummah", should be understood with the verse "Every Ummah has an End"...
The word Ummah, is a Quranic word. It literally means, the adherents or followers of a particular Messenger.
It has been often translated as People, or Nation.
It does not mean anything else.
Though as @Link said in an example, it might be interpreted as Religion.
