Why would I want to classify atheist on the terms of a belief they don't ascribe to?
Because it's a belief they don't subscribe to: that's the terms.

Right. But, atheists don't reject God, they reject the claim that God exists. There is a big difference.

No baby knows how to walk, no baby knows how to talk, no baby knows how to coordinate with depth perception. All of that is learned.
Deities are learned.
Atheism is the lack of a belief in deities.
Do babies believe in deities?
No, they do not.
Therefore, babies are atheists.
