Real maple syrup. Butter is optional. My dad used to eat jelly on his flapjacks. ( I doubt most people have ever had sourdough pancakes like we grew up on) I thought it was odd until I tried it. Also, some good sausage really spruces up any kind of pancake.

We have flat breads (Roti). Butter and especially syrup are things of past when I was younger.

Yes. I like variety, too. I'll sometimes use butter and jam, fruit syrups or cinnamon with butter and a dash of confectioners sugar. I like to experiment with pancakes. Usually, I go back to tradition....old maple syrup and butter.
