Why does every picture of Durga that I can find on web show Her with pink skin?
Is She not dark-blue?

Durga is usually depicted with cream coloured skin, sometimes yellow, though often in a pink sari.
I'm sure, however, depictions differ region to region.

What? Me worry?
What's Durga's significance? What is she the goddess of? (I'm too lazy to Google it so I'm looking for the real world answer.)

Durga is the High Goddess whose inherent energy manifests as this entire cosmos. She is the embodiment of all energy, power, action and motion that happens anywhere and any when.

I see Durga as Mahadevi, the Great Goddess, same as Kali, same as Saraswati, same as Lakshmi. She is everything!

In a nutshell, why are there so many minor (for lack of a better word) gods below the Big Three (Brahma, Vishnu, and Shiva) that seem to do the heavy lifting?

In the Devi Mahatmya, it is taught that the Goddess is supreme. She is Brahman.

Different traditions have different views on these matters.

Brahma, Vishnu, Siva are the High Gods. Saraswati, Lakshmi, Durga are the High Goddesses. They are complements of one another and equal in stature.

Add Parvati with Lakshi and Saraswati. Durga is different category, a Supreme Goddess by herself. A Supreme Goddess, because all Gods gave her their powers including the big three. Her power is equal to the sum of powers of all Gods. In North, it is always red and not pink for Durga. Peaceful forms wear white dress: Brahmacharini and Mahagauri. Kali, of course, wears no clothes other than fingers of demons as her garland and arms of demons as her skirt. She also wear a garland of demon skulls. However Durga has other colors too in her trousseau:

That is why Durga requires so many hands, 8, 10, 16, 20.. After all, she has to have more hands to hold the armament given to her by all Gods. Jai Maa Durge. :D

Not the final say, more of a Vaishnava perspective (Sayak too knows it well, but I can live with it). :)
Shiva is the destroyer as well as the creator through his tandava, that is why 'Mahadeva'.
