Hm...Lord of the Rings!
I'd add "Pirates of the Carribean."
My favorite "bit" of soundtrack is from X-men 2, though -- the opening scene with Nightcrawler attacking the Prez, where the background music is Deus Irae from Mozart's Requiem. Just fantastic!
And there are quite a few movies that quote O Fortuna from Orff's Carmina Burana. It's omninously great stuff for battle scenes.
