Tell me about some female saints.

Within these constraints!

- Pre Council of Trent.
- No nuns, abbesses, virgins.
- No possibly fictional legends.
- Preferably canonised but can be a folk saint.

Joan of Arc (Jeanne d'Arc,French: 1412 to 30 May 1431) is a patron saint of France, honoured as a defender of the French nation for her role in the siege of Orléans and her insistence on the coronation of Charles VII of France during the Hundred Years' War.

Though i believe she was a virgin so probably doesn't count.
And she wasn't canonised until last century so thought she lived prior to your date limit she wasn't a saint until well after
