Why for the funeral it's common to see christians burying their relatives after many days ?

It's not generally "many" days--usually only a few. But a lot of families and friends would like to see their loved ones for just a little longer before they're put six feet under and buried.

My family, being Italian-American and Roman Catholic, usually held to 2-3 days of viewings before burial.

Due to the modern practice of embalming, it's no longer necessary for burials to be held quickly. Cremation is becoming another popular alternative, and it is typically done before the funeral (or memorial service).

Furthermore, families are becoming geographically scattered. When my father dies, all of his family members (except my mother) will need to travel over 1,000 miles to attend the funeral. By delaying the funeral for a few days, the family has the opportunity to make travel arrangements and attend the funeral.

Indeed, this will quickly become the norm as people begin to spread around the globe in a rather unprecedented manner since the first migrations out of Africa.

At the mention of funerals, I always reminded of the words of Jesus...

And Jesus said to another, “Follow Me.” But he said, “Lord, permit me first to go and bury my father.” But He said to him, “Allow the dead to bury their own dead; but as for you, go and proclaim everywhere the kingdom of God.”- Luke 9:59-60

That's not to say I understand Jesus to mean disrespect for the deceased soul, but he understood that the clay body is distinct from the breath of God that vivified it as a living soul, and it is this Divine spirit alone that is sacred.
