To be frank Becky, almost all the information concerning day to day life of the ancient Gnostics has been wiped out.
I'll try my best to answer your questions though.
Firstly, marriage wasn't exactly encouraged by tha ancients - procreation trapped more souls. But i don't personally totally agree with that view, and i don't think Jesus did either.

Does either family or the woman or man pay a dowry?
I have no idea. Back then i imagine they would have done whatever the norm was. Today i see no need for a dowry of any kind, marriage should be for love not money.

Is intermarriage between faiths allowed?
Yes. Gnosticism is accepting of other religions, so long as those religions are accepting themselves.

A good idea. I believe you should only marry someone when you are sure they are "the one" for you.

According to Jesus, only for adultery. So i'd have to go with that.
Like i said earlier, people should only marry if they are 100% certain they will be faithful to their partner, and that they will be able to live together for the rest of their lives.
Even if this means living in a relationship outside of the bonds of marriage for many years, then thats how it should be.
