I eat this daily - best meal prep ever

I get three meals out of it.

I get a container of spinach, a bag of shredded carrots, a can of black olives, I get dehydrated onion and garlic, a bag of almond/nuts/raisin/raspberry mix, and sprinkle some shredded cheese on top. I divide all of this into three containers.

Meanwhile I have chicken breast roasting in the oven. Once that is done I chop that all up and divide that into three separate containers as well.

The first day I eat it fresh of course, the next two days I warm up the chicken in the microwave then dump it into the container with the salad mix. Add some ranch.

Enough meals for three days. 800 calories per meal. Great source of protein and various nutrients and veggies.

And there are no dishes from cooking! I use a foil sheet on the oven pan so I only clean that off once a week since nothing gets on it. The only dishes are the two containers you use for each meal.

Well the meal prep that I made here costs about $7 per serving total. But prices may vary by where you live.

Spinach costs under $4
Onion/Garlic about $3 each container and lasts about a month
Ranch is about $4 and I get a new bottle every three weeks I’d say.
Black olives under $2
Cheese I buy in bulk. A big bag that lasts a month for $8
Carrots are under $4
Bag of almond/cashew/pecan/blueberry/cranberry mix is about $5

Divide the individual things by three. Let’s overestimate it and say $12/3= $4, then the extra ingredients, could potentially add up to $3. So $5-$7 max per meal.

You can save money and cut out the ultra-processed ranch dressing by using the individual chicken container and the fork you will use to eat your salad to mix up your ranch dressing fresh. Salad dressings are really easy to make.

Why do you use dehydrated onions and garlic instead of fresh? Have you experimented with different varieties of olives such as kalamata? If you want to try a change there are alternatives to just roasting the chicken. You could try chicken tarragon, teriyaki chicken or Tandoori chicken.

Why do you use dehydrated onions and garlic instead of fresh? Have you experimented with different varieties of olives such as kalamata? If you want to try a change there are alternatives to just roasting the chicken. You could try chicken tarragon, teriyaki chicken or Tandoori chicken.
From googling it seems that dehydrated onions and garlic have the same nutritional benefits as fresh. I used to use fresh but Im more of a fan of simplifying the meal construction as much as possible

If you want a quick homemade ranch dressing, start with salt, pepper, garlic/onion powder, dried or fresh herbs (dried dill weed if you want to keep it super simple,) and add your choice of:
  • buttermilk (or milk and vinegar) and mayonnaise
  • sour cream, mayonnaise, and vinegar
  • regular or greek yogurt and mayonnaise and/or vinegar
  • any combination of the above depending on what you have on hand.
Vinaigrettes are really easy: salt, pepper, olive oil, (optional mustard) and vinegar (I like white balsamic vinegar that you can get by the gallon from restaurant supply store.) You can make a creamy vinaigrette by adding any of the ranch dressing options above.

The word salad just means salted greens. You can keep it as simple or as elaborate as you want, with the added bonus of getting away from the ultra-processed bottled stuff.
