I don't really know if any other religions document a resurrection.
OK. There are references to the existence of Christ in 1st century writings. Interestingly enough, the New Encyclopaedia Britannica recognizes that there are accounts of the existence of Jesus outside of the Bible, stating: “These independent accounts prove that in ancient times even the opponents of Christianity never doubted the historicity of Jesus, which was disputed for the first time and on inadequate grounds by several authors at the end of the 18th, during the 19th, and at the beginning of the 20th centuries.”—(1976), Macropædia, Vol. 10, p. 145. These accounts of secular historians do not refer to his resurrection, that is true, but rather to his life.
I will say this -- the disciples saw the resurrected Jesus. Yes, in a different form than when he was on the earth, nevertheless they recognized him. Pontius Pilate and his enemies did not see him.

According to the stories in the gospels the disciples saw the resurrected Jesus, but there is no evidence of that outside the Bible. And even if they had seen Jesus, it would have been His spiritual body that they saw, not a physical body. As you said, "in a different form than when he was on the earth, nevertheless they recognized him." Jesus could perform miracles so that would explain how he could have made his spiritual body look like his physical body (Luke 24:39). A spiritual body is real, so maybe it looked like his physical body. There are many possibilities.

Jesus 'came back,' or was resurrected in a body so that his disciples could see him. Especially before he ascended to heaven. You bring up some interesting points in particular about changing his appearance so his disciples could see him. Thanks for that. Unfortunately I have a lot of things to do, but when I come across a point or two in reference to this, I'll be happy to reply.
