Identifying as non-binary means that a person's gender identity does not fit within the traditional binary categories of male or female. Non-binary individuals may experience their gender identity as falling somewhere outside of or in between the male and female categories. This can include identifying as a combination of both genders, neither gender, a different gender entirely, or fluctuating between different gender identities.
But if you divorce gender from biology, how do you even know what male/female is?

That makes no sense. The whole point of divorcing gender from biology is to NOT utilize biological sex

That's just silly and no not the point. It's that the physical characteristics (sex) are separated from societal expectations (gender expression).

I can agree that physical characteristics are separated from societal expectations. So answer my question already; how do you distinguish man from woman?

So you ask why should we distinguish, then you list a couple examples of why we should. I'm sure if you think real hard, you can come up with a few other reasons. My point is, unless there is a distinction, those words become meaningless.

If it were a matter of asking a simple question, you would have been able to give me an answer. The fact that you can't tells me there is no empirical difference in your view.
Having more distinctions than you seem to grasp (by splitting bio sex, from gender), doesn't make it meaningless. You just think it does,
Words have meaning. If you don't know the meaning of a word, it is meaningless

Disliking the meaning of a word does not make the the word meaningless.
Not knowing the definition of of word only makes it meaningless to you.
Seems it is you who have a problem understanding the meaning of certain words.
Most every one else do not appear to suffer from that same problem.

Since male and female are typically distinguished by their genitals* do we need to know this? Like, should people be forced to socially advertise their genital structures?

@The Hammer brought up sex and medicine, and he's right: but in both cases best practice is good communication. If you are dating someone, get to know them before you sleep with them. There's nothing wrong with a one night stand, it's just risky and if their genital structure is going to be a problem for you, best not to do it, eh?

*Biologically, sex is more complicated than gonads and genetics. There are hormones and brain structures involved, as well as psychological characteristics that these influence. It just seem to be the gonads people get all interested in. They say it's genetics as well, but I don't think anyone would care about that.

Well, what other reasons? So you will know their pronouns? So you know what is socially acceptable as to how to talk to them or otherwise treat them? How to market to them? To know whether to be flattered or offended if you flirt with each other?
