Old Testament vs Jewish Scripture

I was pondering this the other day, and couldn't come up with a reasonable answer. If Jesus was the fulfillment of Jewish prophecy, why did they canonize only specific parts of the Jewish scripture?

Why not just include all of Jewish scripture as part of the Christian canon?

Not knowing much at all about Jewish scripture, I'm assuming Christianity selected certian books or works, and included them, and excluded others? If so, for what purpose?

In the New Testament, Jesus quoted Jewish scripture. It seems like it would have been better to go to the original reference material and made that part of the Christian canon.

Anyway, just kinda thinking out loud.

Umm... a quick check on Wikipedia would tell you that we HAVE included all of the Jewish Scripture as part of the Christian Canon.
Well, all of the Scripture that the Rabbis agreed on, anyway. The "Old Testament" is, essentially, the Tanach.

Actually... there are books like Enoch that most Christians don't accept... but they're also books that most Jews also don't accept.
The Canon isn't different, save for the NT.
