cut both ends, make a small incision from one end to the other and peel off the outer layer.

I enjoy the long green onions (scallions) too... especially mixed in scrambles eggs.
Oh, and be sure to save the onion skins so you can make Easter eggs the proper way.

You're suppose to peel them??
If you use them when making chicken soup leave the peel on. It gives a nice golden color to the soup.
Have someone do it for you.How do you peel an onion?
