They're also "good" carbohydrates. Very nutritious too. And at least dozens of different ways to add them to a meal. Or meal of their own.
My favorite is probably herb-encrusted baked potatoes. I cannot stand potato salad though. And undercooked potatoes, in any form, really gross me out.

I just wish there was a wider variety commercially produced. We get about 4, maybe 5 varieties, at the stores, but there are about 1000 varieties. That would just liven up the selecting process.
