I would think most of us have been asked at different places if we wanted to "round our change up" for this or that charity.

Well twice this week, at different places I have had purchases that came to even dollar amounts. One was $51 and the other was $62. Both times I was asked if I wanted to round my dollars up.
When did it graduate from rounding up change to now rounding up dollars?

I was saying that we graduated rounding up dollars when your purchases came to even dollar amounts. You can't very well round up change when there isn't any to round up. How else would you donate for an even dollar purchase?
