Mushrooms are saprophytes and therefor part of nature's recycling process--some saprophytes are outright poison as well, but they still serve a purpose.

Assuming that there is a god, I'd say he would have made them as another one of his stupid tests... He's always trying to get his little humans to do something stupid so he can send them to hell, and this is just another example.
