I try to replace rice with lentils occasionally but it's a let down for me.
AFAIK, lentils aren't a rice substitute. At least two of my daily meals contain lentils. The way I cook lentils, they essentially turn into a paste...a base for my rice dish or the thickening agent for my morning porridge.

They are a new item to my pantry being doctor approved where rice and pasta are no-nos. I used them instead of rice in my stuffed pepper stew. Not bad. But I love rice.

Are you restricted on carbs? Is that the reason for the rice/pasta restriction?

If that's the case, I find cashews to compliment lentils nicely.

I still do not understand why schmaltz cannot be substituted for butter, but I'm the novice here ...
The original French roux appears to have been made with butter, but almost any fat will do. This article lists schmaltz second as a fat to use:

Yep - t2 diabetic, but I don't concern myself as much as I get older. Quality over quantity which my regular PCP is quite familiar with. However, she's the top doc in the facility and uses me to train her residents. I'm good at it. I'm pleasant, attentive, and hardheaded. LOL My primary usually sees me in lab or in the hall and with a big grin and either says "Good girl" or " you're being bad again."

Okay, various sites seem to prescribe against white rice. But whole grains are okay. What does your doctor say about brown rice?

That's a grain, right? That would generally be a no. But honestly, I don't eat as I should, though I try here and there.

We're in negotiations. I'll see him in about a month to continue working on a peace agreement. At this time, I'm allowed 1/2 cup of unspecified cooked rice as a serving, or 1/4 of a meal. Ideally I'd be counting carbs again and totaling my days out at 120 or less. That gets real old after a few years, so we have agreed I will no longer strive for remission, but instead to stay level, even if a bit high.
