Why do we never see these examples raised?
Because these are not evidence FOR creation. These are merely things people have a hard time accepting could have been the result of evolution. There is plenty of good evidence FOR evolution. That's the real point to be made here. There is no good evidence, however, for creationism. None. All you theists ever try to do is poke holes in other things that have been scientifically evidenced.
Even if the examples you raised were a complete mystery, and evolution had no good way to account for them, does this negate all of the other evidence that does clearly support evolution? Nope. It doesn't. Just because we don't currently understand how something could have come about or happened doesn't mean that everything else we have figured out is bogus.
