I was told that there isn't a time limit to conversion and it may only take me a few extra months, a year, or even ten years. Everyone is different. As long as I'm on the journey, I'm welcome in the community and would be helped along the way...

Most Jews did not - and still do not - believe in Jesus as the Moshiach. Them "quitting their jobs" had nothing to do with Jesus "replacing" them.

Fair points. Still, in general, I do think it would be a good idea to reduce carbs as we diet (around 100 - 150 grams a day or so), while not using hydrogenated oils and transfats. If not exactly doing the high-fat method.
