    Ancient folks didn't know what yeast was, so it's not recorded. But there are accounts of old brewmasters having their own personal stirring stick that made the beer just so. That's probably the source of yeast and other beer making microbes.

    The WHO didn't say it's as bad as smoking. Augustus in post 41 above has the numbers they gave. I keep reading headlines that say that processed meats have been placed in the same category as smoke and asbestos (i.e. carcinogens), but even that is stronger than what the WHO actually said.
