My favorite is physics (since math isn't a science). I like the way it attempts to get the the most general descriptions that encompass everything (whether it succeeds or not is another issue). I remember when I first worked through the solution of the Schrodinger equation for the hydrogen atom and realized that the whole periodic table was, in essence, a by-product of that solution. That was a secular-religious experience for me.

My least favorite? Probably geology. Not for any deep reason, or because I think its results are invalid. I just haven't had the time/interest as yet to delve into it deeply.
