I'm going to go out on a limb here and also say Heath Ledger (and yes, I thought this before his untimely death). When I first saw the preview for the "Dark Knight," I couldn't even tell that it was him. The man had a lot of talent.
Had he been here on this Earth for a longer period of time, I'm sure he would have found himself with even more varied roles to challenge his skills as a film actor. I would have loved to see him in more independent films, actually. So, I see where you're coming from.
Adding to my answer from earlier.....when it comes to actresses, I don't think anybody will beat Meryl Streep. Although Cate Blanchett is certainly making a case for herself these days.

De Niro was excellent in Ronin... so was that French guy (who looks like my old sociology teacher).

Patrick Stewart is a Shakespearean actor. I loved him as Scrooge a few years back.
