I was surprised by Snape turning out to be good in HP honestly, even though I know that's kinda old now, its one of the more memorable. Snape is so nasty to Harry althroughout its easy to believe he's evil.
Final Fantasy X had a good one.
Ender's Game was definitely an "oh ****!" moment as I began to realize what had actually happened.
Ocean's 11 had a very clever twist.
Super Troopers is probably my favorite though with its misdirection and lack of foreshadowing that didn't give the ending away.
Shakespeare also has many fine and noteworthy twists.

I saw that one coming a mile away. I even predicted his motivation long before it was revealed in the final book. The clues two books earlier, in Order of the Phoenix, had me thinking in that direction before it was revealed in the final book.
I can't believe no one's mentioned The Prestige yet, sick twist, it makes you think something, then makes you certain it's not right, just to find out it was right.
OP mentioned Now You See Me, which I think is a good example of a bad twist, I mean it was obvious who's gonna be the mastermind, you could easily eliminate all the other characters.
