What does dandelion jelly taste like? I've had the greens in salads, but have never heard of this. It sounds interesting.

Never tried making coffee from dandelion roots, but chicory root makes a great coffee substitute!

I tried making dandelion root coffee and it wasn't good at all. Very likely, I did something wrong.
I am a fan of dandelion greens, though. At some point I wouldn't mind trying some dandelion wine.
Basically, honey.

I think so too. But I get the historicity.
It's certainly takes some a bit of work. Much respect for the bees.
So I ended up with 25 half pints of dandelion jelly. I'm hoping they set. Last year it took weeks for them to set fully.
Do you add pectin, or does it have enough naturally?
I'm scared to do anything with dandelions, as there is so much spraying going on here.
I do add pectin, flowers have none, so it's a must.
I actually talked to city hall and the landscapers of my city to figure out where and when the sprayed. I just told them what I was doing.

I guess that's a bit of free "weed" clean up. Though dandelion is supposed to be good for certain nutrients. I do drink dandelion tea. But you both win here.
It tastes like honey in a jelly form. It's very good.
