I've never tried it with fortified wine. In pasta sauce i use a whole bottle of red but no water.

It was a 'needs must' moment, where we were lacking in red wine. I mean, we had a few bottles, but nothing I was willing to sacrifice to the Gods of Pasta Sauce. So a smaller than normal splash of red wine got mixed in with a healthy slurp of cheap port that had been sitting in the cupboard for a while.
