not sure about how many hadiths there are, but as for how to know if a hadith is true or not....it depends on who you ask. most sunnis will follow the bukhari collection of hadith, which is one of the most extensive collections of authenticated hadiths (according to sunnis). but its all a matter of who you decide to listen to, thats why different muslims believe and authenticate different hadiths.

when i say authenticate, im referring to islamic scholars. they are the ones who study and analyze the quran and other sources to figure out if a hadith is true. when scholars claim that a certain hadith is true, it does not become a hard and fast rule that that particular hadith must be accepted as being true. its up the each individual whether or not they choose to believe the hadith and the scholar who claims it is true.
 
They look to see if there is a sound narration. Let me give you an example.
Lets say Muhammad (saws) said, "It is good to have a cell phone." (keep in mind this is a fake example lol)
Then Lisa heard him. She went and told John. And John went and told Amy. Then they write it down. But wait! John has a bad memory. Or perhaps Lisa was known to report fake hadiths, so then this hadith is disregarded because of them.
And also, if a hadith contradicts the Qur'an or science it is discarded.
