I loved Rurouni Kenshin (AKA Samurai X for any non-Americans here) with a PASSION as a kid, and still do, especially now that I'm old enough to understand the story. There are a few excellent OVA's for it as well.
A great anime movie was Princess Mononoke, by the same guy who did Howl's Moving Castle. Nausicaa of the Valley of the Wind was also fantastic.
My youngest brother is into Rurouni Kenshin, and I've been meaning to get around to watching it. From what I understand, though, as far as anime's go, it deviates from the manga moreso than any other.
And Princess Mononoke was ok.
I haven't seen anyone mention Akira yet.

I watched Rurouni Kenshin like 10 years ago. I don't think I saw the whole series, though.
Basically it's about a samurai dude who used to be bad, but now he's really kind. He fights with a sword that has the blade on the back side rather than the front side, so when he fights people he doesn't kill them.
Well he's also ridiculously skillful and manages to hit them in just the right spot every time.Because, of course, a reverse-blade sword (essentially working as a steel club), has absolutely no chance of killing anyone. lol

I agree with "not getting" a lot of anime, mainly because of rampant fan service.

Inuyasha was approximately twice the number of volumes as FMA and was produced over a longer period of time. Approximately 12 years.
And FMA was itself somewhat long; longer than stand-alone series but shorter than Naruto, DBZ, Bleach, or InuYasha.
One thing I mentioned in my Naruto reference is that Japan produces content that completely defies western concepts of age. Naruto has, for example, lame sexual jokes and genocide. The main character is a kid that fights against dudes that rip eyes out. Porn is referenced from time to time in the series, since some of the characters read porn.

I just enjoy all the the strange and weird eye candy the Japanese are so famous for. I find the gross exaggerations of expression, features, environments, and what not an added bonus.
