Frankly you can't go into depth in high school. Biology is too large a subject.

It certainly is a large subject. Still, even very basic biology supplies plenty of knowledge to defeat any of the nonsense arguments offered by YE Creationists, as long as one has a slight bit of honesty and intellectual integrity, but clearly, these are traits this professor lacks.

I am wondering if anyone can provide me with some very good articles about using biology, genetics, the fossil record, and anything else to support evolution.
Shadow Wolf, I have just finished reading Dawkins' The Greatest Show on Earth: The Evidence for Evolution. This book explains in great and satisfying detail exactly why and how the scientific method has proven evolution. I cannot recommend it too highly.

For me, freshman biology I didn't really pay attention to evolution because I was a hardcore Bible thumper back then (although the process of natural selection made since), and my "advanced-placement" biology class was "evolution is just stupid, it doesn't make since, so we are just going to skip it." That teacher was fired later that year, but not exclusively for that remark.
And as for my philosophy teacher, she got her degree from a Bible seminary so I really doubt she had to take any biology, and if she did it obviously wasn't good biology.

I can understand how many students would get the wrong impression of what natural selection and evolution is based on such poor first experiences with uneducated teachers.
