Are they coming at their arguments from a position of atheism, though? Or is there something else driving their position? Many atheists are where they are because of applied skepticism. That's usually more of a defining position. If you want to have a conversation about their beliefs, maybe don't start with atheism.Hmm many atheists try to do that.

That's kind of a convoluted question. People have reasons for being an atheist. And they usually have an argument to make for the position, as well.
