You are right Poeticus. RigVeda 10.87.16 talks about three kinds of flesh, cow, horse, and human; and that raw-meat should not be eaten, 10.87.2. But there are many brahmin communities who are traditionally non-vegetarians. Vegetarianism is accepted by all Hindus to be better, but non-vegetarians also are part of it. IMHO, it is wrong if one is trespassing his/her traditions.
in some respects I understand your comment about not trespassing traditions as yes I realise that Ksahmeri Brahnins follow a meat eating tradition , ....but prabhu ji are you initiated into and continuing this tradition ? from what I assume from many conversations you are not a strict folower of this tradition ? ... I have also I think heard you fondly make reference to the mahabarata ?
you may of course follow what you like , but do you not beleive the Mahabarata to deliver this yugas Darhma ? ....after all the entire staging of the Mahabarata was orchestrated by Krsna to deliver the 'Yuga Dharma' , ...
as vinayaka rightly said there are times when change is nececary , we all know that as the Yugas progress man is of a different mentality , therefore there are differerent recomendations suitable for mankind .

"Gifts made in all sacrifices [rituals], ablutions performed in all sacred water, and the merit which one acquires from making all kinds of gifts mentioned in the scriptures, all these do not equal in merit abstention from cruelty." .......Mahabharata, Anu.116.40
and like Vinayaka ji even were meat eating to be suddenly sanctioned , I agree I would not change , as in my mind the words spoken in the mahabarata are perfectly true , .... ''

in fact I faced the very problem you refer to , ... in that seeing the cruelty metered out to the cow in order to produce milk I made the decision to follow a vegan diet , at first this worried my Guru as he automaticaly thought that I was trespassing our tradition who hold Milk in high regard as it is very dear to Krsna , so I had to explain my position , if the milk is taken without any cruelty to the cow then I will take it , but all the while that the dairy industry misstreats the cow I will abstain , ...this he understood

I agree with change but only in one direction and that is for the betterment of mankind and fairness to all living beings . this I belive is the message coveyed in the Mahabarata , this is the yuga dharma .
