The opposite of believing is knowing

Nothing is ever known beyond all doubt. But some things are known beyond a reasonable doubt. A doubt is reasonable if the laws of cause and affect allow it.

Belief becomes knowing once the relevant laws of cause-and-effect are understood.

Even if you don't know the certainty, you can still know the probability. If you don't know the probability you can still know the bayesian probability.

Believing is "thinking you know".

Seeing is not always knowing (or even believing) as any magician will show you.

I think I am understander. :D

And because of that, I think the opposite of believing is not-believing. And no one really knows, some just believe their beliefs are more than beliefs.

As @1213 already pointed out, the opposite of (X) is (not X). I know that because I studied logic.

I know what has worked reliably in the past.
I believe it will keep working that way until it doesn't.

I think there are degrees of belief, and degrees of knowing. Religious belief often looks to me like wishful thinking.
 
Believing reflects a desire to think something is true. Knowing can be a practical thing, based on experience. But oftentimes knowing anything beyond a reasonable doubt is elusive, which opens us up to various unprovable beliefs.

I know so much that I know how little I truly do know. You truly need to know something to know that much. If a drop of dew on a leaf was all I knew, I'd be a happy and revered intellectual with that drop compared to all the oceans of the earth. I must be a believer because knowing is extremely limited among humans.

Yeah, some things are. Like electricity. We have laws well explaining how things work and how they will work every time. This is why and how we can reliably make electronic devices without damaging them from too little or too much power flowing through them.
