I'd be okay with it, if the wine was good.

I've never used one but i guess at the minimum it would be good for cooking. The rule of thumb is never cook with wine you wouldn't drink.

It usually comes from a local vineyard who'll want the name to stay good so it's probably not to bad.

I try, really I do. When tobacco was "the" cash crop it was "primed" before it was picked clean. But it was eventually picked pretty clean. Now this. Last year this field (45 acres) was sweet potatoes and the same process as this year's watermelons. Prime and leave to rot. Not a total waste. It will be good for the soil, but we're talking food here, and it's hard to understand.
