What are your favorite oils to cook with?

I like infusing herbs and chilli into olive oil. They have to be dry though, unless you are going to use it all fairly soon. Just put your chopped or powdered herbs/spices and/or chilli into the bottle of olive oil and leave it for at least a few days.

I made one particularly delicious infusion with homegrown cherry tomato chillis, thyme (fresh), sumac and lemon zest. Experiment.

The point of it is, it's really easy to add a precise amount of heat and flavor to a meal, and it saves prep time when you are cooking. You can just stir some into a very plain meat sauce (just some mince fried in butter, with tomato paste and a squeeze of lemon for example) with pasta and it's a gourmet meal in a few minutes.

I am also very fond of sesame oil. Use sparingly. It makes brown rice incredibly delicious.

thanks for your post, i am going to have to try out that sesame oil!, also i like to mix types of hot sauce and peanut oil together with tomato sauce, it makes for a MINDBLOWING experimental taste with spaghetti.

I use olive mostly, but also sunflower oil if I want it to be almost tasteless.

Peanut oil can be dangerous It could kill my grandson and thousands like him.
It should not be used in communal cooking.

Keyword CAN, not always especially if your allergic, but it has never affected me.

point is do not give it to people that are allergic to peanuts, other than that i think it is okay, again it has never affected me.

I use olive, grape seed, canola, and sesame.

Sesame is particularly good in Asian dishes, the rest I use depending on which my hand falls on first :pt

Sesame oil, garlic and chilli in roughly equal partsmixed together over barbecued fresh mussels is one of my favourite treats

My most used are olive oil and occasionally butter. Butter would usually be used for sea food or pork. But I also use canola, sunflower, sesame, and avocado oils among others.
There is no Arabic salad that I make without olive oil, and mussels cooked with butter, garlic and herbs is a favorite.
Marinating is also important as mentioned above.
 
I use grapeseed oil, because a) it's cheaper than olive oil, and b) it's quite healthful to have it. It's good for salads and salad dressings, cooking and frying!

Otherwise, I just use butter or ghee! :/

I can't help it! :p Butter is just so delicious in foods!

-Olive oil - the flavoured ones are so tasty, for example, on pasta. I feel it's good enough for most usage and it is tasty no matter how used.
-Sesame oil for spare use for oriental cooking. It's fatty and has a strong taste so it's used sparingly.

I just use olive oil for everyday cooking.

But it really is amazing the authentic flavor that peanut oil can impart to your stir frys and such. I didn't realize it could make such a difference.

Sesame oil totally rocks for adding flavor, but I wouldn't recommend using it for frying.

Peanut oil with pasta is like peanut butter and bread--comforting. :)

Pasta with oily peanut butter sauce spiked with hot peppers also rocks! :yes:

I typically use Olive Oil for low-heat or no-heat applications. For higher-heat applications, like vegetable stir fry, I use Coconut Oil. Occasionally, I use butter.

I'd also be willing to use avocado oil but I never buy it in practice because I just use Olive Oil and Coconut Oil for everything.

I avoid all other oils.

Meh...olive mostly, but I am using butter a bit more often, particularly for vegetables. Pan-fried cauliflower...yum.
