It is not Mayo. It is Miracle Whip. And while I don't like either, this cake is super moist and soft, and when made with real cocoa it is very yum.

Truly, it's better than any box of cake mix and better even than many bakeries.

My own home-made Victoria vanilla sponge, with strawberries and cream for the filling and topping.

(I've found it can be frozen in chunks and thawed as needed. The strawberry pieces naturally go soft on thawing, but their flavour is, if anything, enhanced by it. So I can enjoy it for a week.)

It's moist, soft, and super yum. You can't taste any Miracle Whip, and using a good cocoa powder makes this cake really and truly a very good cake.
Definitely you should try it.

Not big on salt, i use very little when cooking, i prefer to use wine for flavour

Mayonnaise is basically egg yolks, fat, and a bit of acid. Often lemon juice. All three ingredients can be good in a cake. And mayonnaise cake is really really rich and moist and tasty. Probably not too low in calories.
