As for Cowboy Bebop, the series works like this: There are 26 episodes, but only about five of the episodes have to do with the main plot (episodes 5, 12, 13, 25, 26). Those five episodes are among the best, but the other 21 episodes are all about character development rather than driving the plot. I'd recommend watching it from beginning to last. There's also a movie out for it, which I think is excellent (probably better than the series imo).
True there is an overarching plot line but honestly I don't think Cowboy Bebop is watched for the story line (at least I don't) it's more about the fusion of western and jazz themes in a post apocalyptic setting that makes it enjoyable.

For an anime that really centers around the story line I found Paranoia Agent very good, especially since the summary of what it's about is so absurd.

My favourite series is Closer to Truth with Larry Kuhn on PBS

I also like science programs on astrophysics and quantum mechanics.

For entertainment I watch Formula 1, MotoGP, and Superbike races.

I also enjoy watching religious history programs, and then sending e-mails to the networks listing all the mistakes in their programs.

During the 90's I liked Seinfeld and the Simpsons.

In the 2000's, I liked King of the Hill. I have relatives in Texas and their neighbors remind me of Hank, Dale, and Bill.

These days, I don't watch TV so much. Mostly I watch the History Channel.

Favourite television show is the blue screen and when I surf through the hundred and fifty channels or so of complete bollocks I resign myself to the fact that I pay for nothing but ***** but I continue to do it for seemingly no reason.
