Why did God create anything if he knew in advance what would happen?

Well, that's one of those questions that's better left unasked. Christian theology is fraught with Irrational claims and ideas, which for reasons of self preservation are willfully ignored. So, don't expect any cogent explanations.

He created things because He knew it would be good. Because of our limited eyesight we cannot see beyond our noses what is to come, certainly what would come either after this life or a thousand or a million years from now. If we knew it would be a bad thing to create something we would not do it. It would seem that God would not build anything either if it would be bad for us or Him.

Your question assumes: God knew the result of creating the world God created it knowing said result The logical answer to your question is: If God knew what would happen when He created the world, and yet He created it anyways, then obviously He wanted things to play out as they have/had/will/would have.

If one limits his omniscience somewhat, then it could be he knew that humanity was going to screw up, but not sure how. Or wanted to see where, when and why. That or is there some purpose which humans are not aware of, at least not yet.
Perhaps he simply finds the suffering of people innocent people to be rather amusing?
Or more likely, the story of Adam and Eve is one of many creation myths that should not be taken literally, and is an attempt to explain why there is suffering, where we come from, and how we can avoid being punished by making the same mistake as our ancestors did [not listening to God, and avoiding making the mistakes can be done by listening to the laws revealed by the priests]? I'm sure there are many theories. I'm just throwing a few crazy ideas out there.

He knew. But the other sentient beings, ourselves included, did not. It has to play out so we have a clear understanding of why we end up where we do in the long run. So if we did not have the chance to live out our lives and see the choices we made our final destiny would be meaningless. I of course now this means nothing if you don't actually accept God's existence.
