Why do religious wear special hats?

Sometimes, it's functional and purposeful. Here's a few:
  • Pointy Hats. Energy is often raised and directed during rituals, and this is sometimes done in what is called a "cone of power." The pointy hats symbolically mimic that intent, and can enhance the working.
  • Deep Hoods. These have the effect of constraining peripheral vision and darkening the visual field, which can aid in activities that require introspective focus, such as meditation or divination.
  • Circlets. Circlets are often designed to cover the third eye and have a gemstone set above them. That can serve as a focus or channel for that energy and enhance particular workings.
  • Nature Helms. Deities are often associated with particular animals or plants. Nature symbolism may be worked into a hat/helm of some sort in honor of that deity, or to assist in channeling that deity during ritual.
Overall, any sort of adornment (hats or otherwise) is typically to facilitate whatever sort of working you are doing. It'll have symbolic meaning or a particular function in the ritual. None of it is necessary, but it is fun and engaging for many.

I think the headwear of Eastern Orthodox clerics is fierce (the hat is called kamilavka, the veil is called epanokailimavkion) . :)
