One year a local store had 5 year old gouda. Now that had a bit of a kick. The 1,000 day gouda is just beginning to get what I call "cheese crystals". When eating the cheese one hits these small hard feeling grains. I first ran into them in the 5 year gouda, it has a ton of them. Your first thought is "gross" and then they break and there is an instant shot of intensified cheese flavor in your mouth. I am just salivating at the memory. One would think that something that made cheese the opposite of creamy would be bad. But it clearly is not.1000 day, did you put it in a cage on the way home or did it make its own way?
I do wish we could get stilton, it makes a fantastic broccoli and cheese soup. Still Roquefort is a good substitute

I fell in love with that when in Amsterdam, eating the old gouda with crusty bread a glass of Heineken which, btw, is 12% alcohol there-- you don't drink it, you sip it.One year a local store had 5 year old gouda.
