I do wish we could get stilton, it makes a fantastic broccoli and cheese soup. Still Roquefort is a good substitute
One year a local store had 5 year old gouda. Now that had a bit of a kick. The 1,000 day gouda is just beginning to get what I call "cheese crystals". When eating the cheese one hits these small hard feeling grains. I first ran into them in the 5 year gouda, it has a ton of them. Your first thought is "gross" and then they break and there is an instant shot of intensified cheese flavor in your mouth. I am just salivating at the memory. One would think that something that made cheese the opposite of creamy would be bad. But it clearly is not.

I was right! Cheese crystals!!
I'm aging some of this in a 100+ year old crankcase
deep inside a converted horse riding arena filled
with vintage scrap, furniture, & feral cats.
