Not "chicken periods," not "full of blood and mucus," but they're clearly animal tissue.
As far as vegetarianism, there are all varieties of vegetarians. Some are barely distinguishable from carnivores, some avoid everything remotely animal.
In Indian vegetarianism, especially for the Brahmins, milk is OK, but usually not eggs. It varies, of course. India's a big place with all sorts of different religious and dietary traditions.
