Hopkins is someone with a long history of libeling innocent families, provably. She's been sued on this, and lost, several times.

But moreover, the burden of proof is on her to demonstrate her claims, not on those criticizing her to prove them false. Near-everything she says gives zero backing evidence, and stories produced by her have had to be retracted from even the Daily Mail on the grounds of her literally just making things up. Basically, she's gutter tabloid "journalism."

The second is her asking random people in a crowded large city questions, akin to when Conan O'Brien used to do the same to random tourists in LA. Normally what people do in a video like that is cherrypick out crazy or stupid people who will be entertaining to watch, and it looks like she tried to do that. Except it mostly doesn't work, because she was mostly just rambling to her guests about "creeping sharia law" while they nodded slowly or walked away.

I'm not sure what either proves other than that she's a bit of a troll, and much less funny at it than Sacha Baron Cohen.
