Which way to the woods?
There are definite advantages of gas over conventional electric. I would have gas if they had it. Though there do appear to be some negative aspects if one has children. I may go induction top if they don't have gas when my current stove dies. It appears to be better than gas. If you have the right pots and pans.
Yes, I saw the induction example you gave. It does look impressive. And gas does provide more opportunities for accidents. We need some new, super efficient, non carbon energy solutions quickly.

Electricity is potentially carbon free. It is getting more so every day since wind and solar are now cheaper than oil. And that was before the Russian attack on the Ukraine. If you want to try it without going whole hog it can be nice to have an extra hob or burner, depending on where you live, for the holidays.

Here they start at about $50.00 US . They plug into a standard outlet. They are probably available where you live:

Pots and pans that work: Cast Iron, Carbon steel. Some stainless steel and some no-stick.

What does not work: Cheap all aluminum pans. Very expensive solid copper with tin lining pans (I looked some up and a frying pan can run $600.00). The easy test is to see if a refrigerator magnet sticks to it.

The cooktop does nto get hot from the induction unit at all. But the pan sitting on top of it will heat it over time.

Awesome. I may try one.

And progress is being made with solar and wind. We have approved 500 acres worth of solar farms just in my little town in the last 2 years. It is now a matter of getting these farms directly connected to the towns they can serve. And our state in conjunction with the state university, is apparently going to try an offshore wind farm. It remains to be seen if it produces more benefits than harm. If we can figure out viable distribution, and policies favoring the renewables over big oil, we may actually be ok. But it needs to happen now. Looking at the laughter recieved by the POTUS at his speech last week, it will continue to be a battle instead of all hands in.

We already have plenty of them.
The problem is that there is more money in fossils.

And for some reason people are all up in arms when they hear the word "nuclear", while last generation nuclear power plants really are of a whole other level compared to soviet era stations from the 70s.
