Yup. But in general isn't the purpose of eating spicy-hot food the spicy-heat? Meaning if it was easy, it wouldn't be spicy-hot, it would be bland?

That's what I was going for.
I think it adds to the flavor, which makes it complex in my mind. Too much heat, you alter the flavor of the dish. Too little, and you alter it another way...

Actually, I disagree a lot. Cooking can be very complex (understanding the properties of proteins and other ingredients, how they respond to heat, and much else beside), but the actual job of cooking -- if you do your mis-en-place first -- is often quite remarkably simple.

That's why I put it in the simple but not easy. Anyone can heat a pan and throw stuff in to cook. But it takes skill to do well.

Just a note in case it's not clear. I didn't intend spicy as bad.

And as I am considering the replies, none of them are bad. In fact the are all good. Potentially very good. I wonder if that is connected to the depth of each concept produced by the distinction between simple and easy.
