Not tendon...cartilage.. generally served cold.. and Blood tofu ios not all that bad...compared ot pig intestine, lung and cow cartilage..
Just the fish eyes.....not the entire head....wasteful

I use to see stuff like this fly over a college I went to many year ago
I actually asked the main office at the college if they intentionally built the school in the flight path of B52 bombers or if they were just lucky.... Yeah they didn't much like me
