The brain is a funny thing. My sister must work on Thanksgiving so at 6 AM Monday she decided to make turkey and needed an answer to a cooking question so she called me. ( I'm there, "what the ****?" Who calls at six?). But, no matter. She says, "it says to cook for four to six hours, when should I put it in?" A working brain might think, "it doesn't say that!". But, I am so goddamn trusting, I thought nothing of it and so I said that because it is stuffed put it in at ten for five o'clock. I am not a genius. OMG! You already knew that. Now, you might want to know what the point is. Turkeys sometimes come in a cool hefty bag with directions and she had not thrown it out and so I said, "it says 3 to 3 1/2 hours." And, she cooked it at 350 degrees just because she wanted to. But, now we know that to defrost it in cold water is for four to six hours and that that size turkey was to be cooked at 325 for three to three and a half hours. I should probably say that she did realize that the turkey was done before the six hours transpired and so the turkey was still edible, but it was a little dry. The stuffing was delicious!
