A 'theory' in scientific jargon indicates an established understanding, generally. Fact is pretty hardcore.

How can you say it is when it isn’t fact apparently?

I could say try walking off a cliff but i wont. Once you learn the meaning of scientific theory come back and try again.

Oh, as a side note. The art of flying is simply throwing yourself at the ground and missing

Science cannot presume certitude. It does not propose a theory to be 'what is', but rather to be 'what works' in the circumstance.
