Nachos!!! :) Yum! (Don't have this too often though or you'll get fat, lol!) Get a box kit then... Load it with veggies (tomatoes, red peppers, corn for some sweetness if you like that) plus you can add vege mince and then the most important bit - CHEESE! I used mild low fat cheddar, because it's still quite fat but at least a bit less than regular ones.

Eating pate chinois tonight, in a few minutes, which is the French Canadian version of sheperd's pie. Here's the recipie, no quantities because I never mesure, just make as much as you need!

First pre-heat the oven at 190c. Cook up some mince (of course, use veg mince) with some chopped veg like celery, onion and carrot. Make mashed potatoes and get yourself cans of creamed corn or you can mix some creamed with dry corn for those of you who don't like it too creamy. Oh innuendo! ;)

Then you layer it up! First put the mince mix in the bottom, then the creamed corn and finally the mash. Then put some paprika powder on it and pop it in the oven for 20 minutes (or until slightly crispy on top). Then you know it's done!

It should look like this:

If you want you can have a bit of ketchup with it, it's really good!!! ^___^
