What is better fries with.Or without ketchup?

Quality fries cooked properly can be good plain otherwise I'm a fan of many of the condiments others have mentioned. Though as for ketchup, I prefer either home made or sugar free ketchup, the usual fare is too sweet for my liking.

The only condiment I don't care for on fries is mustard, I had a friend who'd only eat fries with mustard.

Chips (fries) with malt vinegar and salt.

Or a blob on mayo

Or hp sauce (brown sauce)

Or Heinz tomato ketchup

Or maybe pimento sauce

Or maybe gravy.

Chips with everything.

If you like spicy, try Tabasco brand Chipotle Sauce. mmmm, The base is very reminiscent of A1 or a less sweet HP but has a Chipotle kick.

In Belgium every self-respecting fries bar only serves freshly cut fries. Freezer fries are a big no-no.
Also: fry them twice! The first fry serves to create a "waterproof" barrier around the fry. Then they have to cool. A second fry will make them crisp and golden on the outside while still moist on the inside.

A typical fries bar will look like this:

I just love it so much....
It's part of Belgian DNA.
If you ever find yourself in Belgium and fail to visit one of these, it's like going to Paris and NOT seeing the Eiffel tower.
