In Belgium every self-respecting fries bar only serves freshly cut fries. Freezer fries are a big no-no.Here in Maine, agricultural fair fries are just begging to be sprinkled in salt and malt vinegar. These are potatoes from THE COUNTY*, mind you, fresh cut and deep fried per order.
*The County is Aroostook county, the northernmost county where potatoes are a major crop.

Curry sauce on fries is great. Ketchup is dull, mayo is bland but a good curry sauce seriously ups the potential of what a fry can be and do.Just remembered the most important additional to chips (fries/frits)
When i was a young teen there was a local fish and chip shop that was run by a Chinese family. The chinese yellow curry sauce was my introduction to curry and it was beautiful on chips.
Every Friday night on the way back from the youth club, the treat was curry and chips...
