What is better fries with.Or without ketchup?

The absolute best is with mayo AND ketchup AND chopped up raw onions.

In Belgium, we call that "a special".

Or even better.....

Fries with beef stew sauce and mayo. Absolute Belgian speciality. You'll find this in literally every fries bar in every village, town and city

And yes, "fries bar" (aka "frietkot") is a thing in Belgium. A national pride, even.
A village is not a worthy village if it doesn't have at least 2 or 3 of those. :D :D

I'm with the malt vinegar folks.
To each their own off course...
But to a chauvinistic Belgian fries fan like me, that kind of feels like blasphemy :D :D

I guess that's how Italians feel when you ask for a spoon to eat spaghetti or when you're at a restaurant asking for "spaghetti bolognese" or spaghetti as a main course or a pizza hawai with friggin' pineapple on it.

Here in Maine, agricultural fair fries are just begging to be sprinkled in salt and malt vinegar. These are potatoes from THE COUNTY*, mind you, fresh cut and deep fried per order.

*The County is Aroostook county, the northernmost county where potatoes are a major crop.

I eat my fries by itself nothing on them unless I get chilli fries. Then it's just cheese and chilli

In Belgium every self-respecting fries bar only serves freshly cut fries. Freezer fries are a big no-no.
Also: fry them twice! The first fry serves to create a "waterproof" barrier around the fry. Then they have to cool. A second fry will make them crisp and golden on the outside while still moist on the inside.

A typical fries bar will look like this:

The fries on top there all had their first fry. They'll get their second fry upon ordering.




Yeah, I'm a french (*cough*..BELGIAN...*cough*) fry fanatic, in case you hadn't noticed yet :D


I just love it so much....
It's part of Belgian DNA.
If you ever find yourself in Belgium and fail to visit one of these, it's like going to Paris and NOT seeing the Eiffel tower.

Originally two slices of texas toast, two hamburger patties, a mound of fries covering all, drenched in cheese sauce...like this:

Just remembered the most important additional to chips (fries/frits)

When i was a young teen there was a local fish and chip shop that was run by a Chinese family. The chinese yellow curry sauce was my introduction to curry and it was beautiful on chips.

Every Friday night on the way back from the youth club, the treat was curry and chips...

My favorite way of eating fries is using the air fryer to make them extra crispy then seasoning them with season salt. Ketchup is a great condiment but with season salt I don't need to use ketchup.

Fried in pure beef tallow first. When fries actually tasted fantastic once upon a time.

Then and only then you put ketchup on it MWF. Vinegar on TT and then on weekends at the fairgrounds.

Curry sauce on fries is great. Ketchup is dull, mayo is bland but a good curry sauce seriously ups the potential of what a fry can be and do.
Too me it seems a natural thing for fish and chips because then you the same sauce for both.
